QALIA قلیہ یا آلو گوشت
In a cup of water add:
3 TABLESPOONS CORIANDER POWDER دھنیا
2 TABLESPOONS OF RED CHILI POWDER لال مرچ
1 LEVEL TEASPOON TURMERIC POWDER ہلدی
1 TEASPOON GINGER PASTE ادرک
1 TEASPOON GARLIC PASTE لسسن
Cut 3 MEDIUM SIZE ONIONS, set aside one cut onion
Heat 3 TABLESPOONS MUSTARD OIL until it starts steaming and mustard aroma is gone, now fry 2 of the cut onions until they turn reddish brown then add the water mixture and ensure turmeric aroma is gone; then add:
1 KILO (2.2 LBS) BEEF LEG (NOT THIGH) مچھلی کا گوشت
4 CUPS OF BOILED WATER
and cook until meat is tender, then raise flame to high to evaporate water and continue reducing for nice reddish color; then add
4 MEDIUM-SIZE POTATOES آلو cut large and add about
4 CUPS BOILED WATER to tenderize the potatoes
When potatoes are cooked then separately fry the remaining onion in MUSTARD OIL until reddish brown now mix it in nicely with cooked qalia to evenly distribute the flavor and cover with lid. Garnish with chopped coriander before serving.
