NARGISI KOFTAY - Narcissistic-eyes meat balls (pun intended)

Nargisi koftay -    نرگسی کوفتے

Hard boil
      EGGS (8-12)  and peel off the shell. Now use the kofta recipe at the point where ingredients are mixed in well with the uncooked mince meat and you are about to make the meat balls. Instead make meat balls to surround the eggs with the mixed mince meat so that when you cook them they should not fall off and neither should the egg be exposed. Use previously boiled water and hands to make the balls. Good luck!! Now continue with the kofta recipe from the point where the balls had been made and very lightly fried to solidify it a bit (it's not cooked).

The name 'nargisi' (narcissis like) has to do with the Indian concept of beautiful eyes; when the kofta is cut in half then if you look at it from the egg side then the yolk represents the pupils, the egg-white the iris surrounding it and the brown of the meat representing the lovely eye-lashes of a desi girl. 

Go figure!
