AALOO KI BHUJIA -   آلو کی بھجیا

Boil 1 KILO POTATOES in water, when done then peel, cut in half  and make thinnish, spherical slices.

Fry  2 MEDIUM ONIONS cut finely and spehrically
in     1 CUP MUSTARD OIL which has been heated and mustard odor gone; now add onions till reddish brown; then add:
        8-10 GREEN CHILI very finely cut
        1 TEASPOON RED CHILI POWDER
        1 BUNCH FRESH CORIANDER or DILL finely chopped
        2 TOMATOES finely sliced
        1 TABLESPOON WHITE CUMIN WHOLE
        2" PIECE OF JULIENNED GINGER (if desired)
add boiled water and when it starts to bubble it should be done - it should not be too saucy

Eat with poori or roghni tikia for breakfast - also with fried egg - yummy!
