BAINGAN KA BHURTA - Eggplant

Baingan ka Bhurta -    بینگن کا بھرتا

Wash and boil until soft:
      1/2 KILO EGGPLANT
Cut into thin slices and mash by hand adding
      1 TABLESPOON CRUSHED RED PEPPER
      4-5 GREEN CHILI cut fine
      1/2 BUNCH OF CORIANDER cut fine; 
also dry fry:
       1 TEASPOON WHITE CUMIN to tease out it's aroma and crush by hand and add.
Mix it all real nice. 
Now heat:
       1 CUP MUSTARD OIL till mustard odor has gone then fry:
       1 MEDIUM ONION finely sliced until reddish brown; then add eggplant by stirring it will be ready soon.
Garnish with finely cut GREEN CHILI.
