NIRIMISH or DIWANI HAANDI - Seasonal mixed vegetables

DIWANI HAANDI -  دیوانی ہانڈی

In:
       1 CUP MUSTARD OIL
add:
       2 CHOPPED ONIONS
       1 TEASPOON FENUGREEK SEEDS
and cook till onions are reddish brown, then add:
       1 TEASPOON GINGER POWDER
       1 TEASPOON GARLIC POWDER
       1 TEASPOON TURMERIC POWDER
       2 TEASPOON RED PEPPER POWDER
       1 TABLESPOON ONION (NIGELLA) SEEDS
now add nicely cut:
       1 EGGPLANT
       2 TOMATOES
       1 BEETROOT
       2 CARROT
       1 SMALL CAULIFLOWER
       1/4 CABBAGE
       200 GRAMS FRENCH BEANS your guess is as good as mine
       1/2 KILO (1.1 LBS) SPINACH
       2 POTATOES
       SALT
       1 CUP WATER
add more water if needed, close lid and cook till almost ready;
now add:
        DILL
        CUT GREEN CHILLIS
and finish shortly.


NOTE: If this combination is not available then add any vegetable
             except those that have a soft and wet interior like squash and zucchini.
