SHAMI KEBAB - Beef

SHAMI KEBAB   شامی کباب

Boil in 2 cups of water: 
       1 KILO (2.2 LBS) LEAN MINCE BEEF   قیما
       4 TABLESPOON RAW CHICKPEAS    کچے چنے کی دال
       1 TABLESPOON GARAM MASALA    گرم مسالا
until water evaporates and chickpeas have melted   پگل 

Grind above in small batches (i don't know why - you want to argue with her?),
now add:
        SALT
and very finely cut and tiny باریک :
        2 MEDIUM ONIONS
        GREEN CHILIS   حری مرچ
        CORIANDER    دھنیا
        GINGER    ادرک
Mix it all in nicely and make small patties starting ball size and squish. Fry no
more than four at a time on medium آنچ  flame with not too much oil until reddish
brown then flip.

    I never met her but tears well up whenever I come here. In a weird way I miss her presence in the world.
    It's supposed to be ground in small batches for even and fine mincing. The larger the batch, the top layer is prone to be left grainy (دردرا)
