GALAWAT KEBAB    گالوت کباب


Mash to a paste with skin:  
       3 RAW PAPAYAS, small about 4" in size    پپیتا 
Mix 2 TABLESPOONS of papaya paste with:
       1 KILO (2.2 LBS) MINCE BEEF LEAN    قیما  and set aside for 2 hours
Dry fry  بھونو :
       2 TABLESPOONS CORIANDER SEEDS    سابت دھنیا
       1 TABLESPOON POPPY SEED    خسخاس
       1 TABLESPOON WHITE CUMIN SEED    سابت سفید زیرا
       now crush with :
       1 HEAPING TEASPOON OF GARAM MASALA    گرم مسالا and add        
       2 TABLESPOON CHICKPEA FLOUR    بیسن   and set aside
Fry 2 MEDIUM SIZE ONIONS cut fine reddish brown in 
       2 TABLESPOON MUSTARD OIL with
       1 TEASPOON RED CHILLI POWDER; remove from pan minus 
       the oil and grind it
Now mix everything together adding SALT to taste and marinate for 
for an hour and a half at minimum.

Make small patties starting with a ball size and squish;  fry no more 
than 4 at a time on medium آنچ  flame in not too much MUSTARD oil until color 
changes to a reddish brown then flip.
