CHUQANDAR KI BHUJIA - Beets and potatoes

Chuqandar ki Bhujia -   چقندر کی بھجیا


Cut 1/2 KILO BEETS and 
       1/2 KILO POTATOES in a similar manner and size so that they are shaped spherical and not too thin.

heat 1 CUP MUSTARD OIL until mustard odor is gone; then fry:
        2 MEDIUM ONIONS sliced thin until reddish brown; now add:
        2 TABLESPOON RED CHILI POWDER
        1/4 TEASPOON TURMERIC POWDER
        1 TEASPOON GARLIC PASTE
        1 TEASPOON GINGER PASTE
        SALT TO TASTE and lastly after turmeric odor is gone add the beets and potatoes and:
        2 CUPS OF WATER and cook till ready; make sure its soft and edible. Turn off  heat and mix in nicely and evenly finely cut:
        GREEN CHILI and
        CORIANDER OR DILL
and save some to sprinkle as garnish.

to this day i call it 'laal aaloo'
